Over the winter months I do a lot of cooking in the oven. It’s so much easier and less messy than on the stove, and I don’t mind that it makes my apartment nice and toasty either! I recently discovered that Cameron enjoyed the roast chicken breast I was making. It’s so easy I thought I would share the method. For those less inclined cooks out there – don’t worry, it’s super easy! This uses chicken breast on the bone, with the skin on. I don’t give Cameron the skin, but it helps keep the chicken moist during cooking.
Set your oven to 400
Spray a baking sheet with cooking spray (or you can use a dutch oven or casserole type dish)
Place the chicken bone side down / skin side up on the baking sheet
When the oven is up to temperature, bake for 45 minutes, or until the internal temperature is 165.
That’s it! If you want to make this for yourself – I would add some salt and pepper to the chicken before baking it.
Of course Cameron can’t eat all this at once, so I take off a few bits at meal time and leave the rest wrapped up in the fridge.
Cameron and I had such a great time in DC over Christmas that we are going back down today. We’re taking the train together – so I will be sure to report on how that goes once we return!

Brrr! It certainly feels like winter out – which makes me want to eat something nice and warm for breakfast. I posted awhile back about the Oatmeal that Cameron likes to eat that I make with Bananas. Now that he is drinking cow’s milk I make it with whole milk instead of water and we share it (he ends up eating most of it though!) I just thought I would highlight the post for my newer visitors in case you might have missed it. Stay warm out there!

If you want to try something different, add applesauce, pureed pears, or pureed pumpkin to the oatmeal. It’s a great way to get some extra fruits or veggies in there. Also, oatmeal is an excellent source of protein – so this really makes a great breakfast!
Awhile ago a few moms had suggested to me that I try string cheese as a finger food for Cameron because it was a really mild cheese. I bought some and gave it a try. On attempts 1 through 3 it was apparently so revolting that Cameron gagged and threw it up (along with whatever else was in his tummy). But the other day I tried it again and he seemed to love it! I have always heard that you should try to introduce food multiple times, but this was the first time I have had a failure turn into a success. So keep trying mommies! Eventually, it just might work….
I am so excited – Mom’s Night Out is almost here! And after the weekend (or lack there of) that I had, I am in need of a night out, and a few cocktails. Here are the details:

For a few years now my friend has been trying to get my husband and I to go to the Atlantic Antic, and we’ve never made it. But this year, I think we are going to really try. This Sunday was rainy and gloomy, and I wanted to get Cameron out of the house, but I wasn’t sure where to go. Usually on Sundays my husband and I get take out from 67 Burger for lunch, so I thought (inspired by Lunchtime with Tillie) that I would bring Cameron along and eat there. I have to admit I’ve only put him in a high chair once before at Connecticut Muffin, and it didn’t go well, so I was nervous. I ordered him the kids grilled cheese with sweet potato fries, and we sat in the front so he could watch the action on the street. He loved it, especially the pickles! We will certainly be back!

Yum Yum!
Cameron is pretty regular about his eating, but I always carry with me a few scoops of formula in a baby cube to add to his water bottle (which I always have, too) just in case he is he starving and we are out and about. I make sure to wrap a rubber band around the cube to prevent any spills! This came in handy last Friday when we were visiting Dad at work and needed a snack.
